You have make a new condition for the Java.exe in %programfiles%\Java.....

I have tried to use the documentation of "Installing Java 7u21..." from the documentation page and then marked the type as "update" but then all my machines (also the servers) want to install java.

Create a new condition for only workstations XP and higher.

Both conditions, Java.exe and Workstation condition you can combine in a AND condition.
